Pumpkin Spice Tacos

May as well try to get in the habit of posting culinary creations. :)

For some reason, the only cans of pumpkin puree sold here in middle-of-nowhere-Canada are huge, requiring me to make many pumpkin-y things all at once. (Which is awesome.)

So, Monday I'll let you know how the pasta sauce turns out, and today I'm making pumpkin muffins with streusel topping... but last night, I made pumpkin spice tacos!

Pumpkin Streusel-Topped Muffins

SERIOUSLY. That can of pumpkin holds SO MUCH PUMPKIN. It's ridiculous.

So I made a double-batch of The Alchemist's muffins. (And I still have pumpkin leftover for tomorrow's pasta!)

Note - if making a double batch of muffins, do NOT make a double-batch of topping. I have to think of a way to use it, now, since we depart Thursday night. Oops. :)
