

Dinner tonight was DELICIOUS!!!!
I made mushroom-swiss stuffed chicken breasts, paired with spinach (sauteed with the remaining mushrooms), and yummy parmesan knots.
Utterly divine! So proud of myself

Spinach:
*Put in a pan with pre-sauteed mushrooms/onions (and garlic if desired), along with some more extra virgin Olive Oil.
*Place 1-2 LARGE handfuls of spinach in per person.
*Cover and cook 1 minute.
*Turn the spinach over (tongs is the easiest).
*Cover and cook 1 minute!
*Serve!
